4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 teaspoon Italian seasoning

¾ cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon red pepper flakes (optional, for heat)

Fresh basil leaves, for garnish

Instructions
 

Season the Chicken: Start by seasoning the chicken breasts generously with salt and pepper on both sides.

    Heat the Pan: In a large skillet over medium-high heat, add olive oil and allow it to heat up. Once hot, add the chicken breasts.

      Sear the Chicken: Sear the chicken for about 5-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside.

        Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and Italian seasoning, cooking for another 2-3 minutes until the tomatoes start to soften.

          Add Spinach and Cream: Stir in the baby spinach, allowing it to wilt down for about a minute. Then, pour in the heavy cream, stirring to combine everything.

            Incorporate Cheese and Chicken: Gradually add the grated Parmesan cheese and stir until the cheese is melted and the sauce is creamy. If you like a little heat, add the red pepper flakes at this point. Return the chicken breasts to the skillet and spoon some sauce over them.

              Simmer: Allow the chicken to simmer in the sauce for an additional 3-5 minutes to absorb the flavors.
