4 boneless, skinless chicken thighs

1 cup long-grain white rice

1 cup low-sodium chicken broth

1/2 cup honey BBQ sauce (store-bought or homemade)

1 medium onion, diced

2 cloves garlic, minced

1 cup corn kernels (fresh or frozen)

1 cup black beans, rinsed and drained

1 bell pepper (red or yellow), diced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish, optional)

Instructions
 

Prep the Chicken: Season the chicken thighs with smoked paprika, oregano, salt, and pepper. Set aside.

    Heat the Pan: In a large, deep skillet or a Dutch oven, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken thighs. Sear for 4-5 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

      Sauté Vegetables: In the same pan, add the diced onion and garlic. Sauté for about 2-3 minutes, until the onion becomes translucent and fragrant.

        Add Rice and Liquid: Stir in the rice, ensuring it's well-coated with the remaining oil and onions. Pour in the chicken broth and add the honey BBQ sauce. Mix until the rice is evenly distributed across the pan.

          Bring to a Simmer: Place the seared chicken thighs back into the pan, spooning some sauce over them. Bring the mixture to a simmer.

            Add Corn and Beans: Once simmering, stir in the corn kernels and black beans, distributing them evenly in the rice.
