1 lb (450g) Italian sausage (sweet or spicy, your choice)

2 medium zucchini, chopped into bite-sized pieces

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 red onion, cut into wedges

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for spice)

3 tablespoons olive oil

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sausage: In a large bowl, slice the Italian sausage into 1-inch pieces.
