Ingredients

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

2 cups fresh spinach

2 tablespoons fresh parsley, chopped (for garnish)

Cooked rice or pasta, for serving

Instructions

Prepare the Shrimp: Season the peeled and deveined shrimp with salt and pepper. Set aside.

Melt Butter: In a large skillet, melt the butter over medium heat. Once melted, add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant but not browned.

Cook the Shrimp: Add the seasoned shrimp to the skillet. Cook for 2-3 minutes on one side until they turn pink, then flip them over and cook for an additional 2 minutes on the other side.

Add Tomatoes and Spinach: Stir in the halved cherry tomatoes and fresh spinach, cooking everything together for another 2-3 minutes, until the spinach wilts and the tomatoes soften.

Add Lemon: Pour in the lemon juice and add the lemon zest. Stir to combine, ensuring the shrimp and vegetables are coated in the lemon-garlic butter sauce.

Taste and Adjust: Taste the mixture and adjust seasoning with more salt, pepper, or red pepper flakes if desired.

Garnish and Serve: Remove from heat, sprinkle with fresh parsley, and serve immediately over cooked rice or pasta to soak up the delicious sauce.
