To achieve the perfect balance of flavors in your Zesty One-Pan Lemon Herb Salmon with Asparagus, the preparation of the asparagus is crucial. Start by washing the asparagus thoroughly under cool running water. Trim the tough ends of the stalks—usually about an inch from the bottom. This step is essential as these ends can be fibrous and unpleasant to eat.

Ingredients

4 salmon fillets (6 oz each)

1 lb fresh asparagus, trimmed

3 tablespoons olive oil

2 lemons (1 sliced, 1 juiced)

4 cloves garlic, minced

2 teaspoons dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Pan: In a large baking sheet, spread the asparagus evenly. Drizzle with 1 tablespoon of olive oil and season with salt, pepper, and half of the minced garlic. Toss to coat and create a bed for the salmon.

Season the Salmon: In a small bowl, combine the remaining olive oil, lemon juice, thyme, rosemary, and the remaining minced garlic. Whisk until well blended. Place the salmon fillets on top of the asparagus and brush the herb mixture generously over each fillet. Season with salt and pepper.

Add Lemon Slices: Lay the lemon slices over the salmon fillets, distributing evenly for added flavor.

Bake: Place the baking sheet in the preheated oven. Bake for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.

Garnish and Serve: Remove from the oven, garnish with chopped fresh parsley, and serve hot.
