12 oz (340g) pasta (penne or fusilli)

1 tablespoon olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free version)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup fresh basil leaves, chopped, plus extra for garnish

1/2 cup grated Parmesan cheese (or nutritional yeast for a dairy-free option)

1 tablespoon balsamic vinegar (optional)

Instructions
 

In a large pot or skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Then, add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Stir in the crushed tomatoes, vegetable broth, dried oregano, red pepper flakes (if using), salt, and pepper. Bring the mixture to a gentle simmer.

      Add the pasta to the pot, ensuring it's submerged in the tomato mixture. Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

        Reduce the heat to low. Pour in the heavy cream and stir until well combined, creating a creamy sauce. Cook for another 2-3 minutes until heated through.

          Remove the pot from heat and stir in the fresh basil, grated Parmesan cheese, and balsamic vinegar (if using). Taste and adjust seasoning as necessary.
