Ingredients

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, diced

1 pound cooked turkey, shredded or diced

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper to taste

6 cups low-sodium chicken broth

1 cup uncooked wild rice (or brown rice)

1 cup whole milk (or heavy cream for extra creaminess)

1/2 cup frozen peas

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic, followed by the sliced carrots and diced celery. Cook for another 5-6 minutes until the vegetables are softened.

Add Turkey and Spices: Incorporate the shredded turkey into the pot, followed by the dried thyme, dried basil, salt, and pepper. Stir well to combine, allowing the flavors to meld for about 2 minutes.

Pour in the Broth: Add the chicken broth to the pot and bring the mixture to a simmer. Once simmering, stir in the uncooked wild rice (or brown rice). Cover the pot and cook for about 35-40 minutes or until the rice is tender and has absorbed some of the liquid.

Make it Creamy: Once the rice is cooked, reduce the heat to low. Stir in the whole milk (or heavy cream) and frozen peas. Let the soup simmer gently for an additional 5 minutes to warm through and thicken slightly.

Finish with Freshness: Just before serving, stir in the lemon juice for a bright finish. Taste and adjust seasoning if necessary.

Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Enjoy your comforting bowl of creamy turkey and rice soup!
