Ingredients

12 oz spaghetti

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (15 oz) diced tomatoes with green chilies

1 can (15 oz) black beans, drained and rinsed

2 cups beef or chicken broth

1 cup corn (frozen or canned)

1 cup shredded Mexican blend cheese

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sliced jalapeños for garnish (optional)

Sour cream for serving (optional)

Instructions

Brown the Meat: In a large pot or Dutch oven, cook the ground beef or turkey over medium heat until browned, about 5-7 minutes. Drain any excess fat.

Sauté the Aromatics: Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent and garlic is fragrant, about 3-4 minutes.

Add Seasoning and Liquids: Stir in the taco seasoning, mixing well to combine with the meat. Pour in the beef or chicken broth and diced tomatoes (with their juices). Scrape up any brown bits from the bottom of the pot.

Incorporate Pasta and Beans: Add the spaghetti, black beans, and corn to the pot. Stir to submerge the spaghetti in the liquid.

Cook the Spaghetti: Bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 10-12 minutes, stirring occasionally, until the spaghetti is cooked al dente and the sauce has thickened.

Finish and Serve: Once cooked, stir in half of the shredded cheese until melted and well incorporated. Taste and adjust seasoning with salt and pepper if needed.

Garnish and Enjoy: Serve hot, garnished with the remaining shredded cheese, fresh cilantro, sliced jalapeños, and a dollop of sour cream if desired.
