Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon poppy seeds

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

1 cup buttermilk (or milk with 1 tablespoon lemon juice added)

2 large eggs

Zest of 1 large orange

1 teaspoon vanilla extract

1/4 cup fresh orange juice

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, poppy seeds, baking powder, baking soda, and salt. Whisk together until well blended.

Mix Wet Ingredients: In a separate bowl, whisk together the melted butter, buttermilk, eggs, orange zest, vanilla extract, and fresh orange juice until smooth.

Combine Ingredients: Pour the wet ingredients into the dry ingredients. Gently fold the mixture with a spatula until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Serve: Once cooled, dust with powdered sugar if desired, and enjoy your delightful orange poppy seed muffins with a cup of tea or coffee!
