4 large bone-in, skin-on chicken thighs

3 tablespoons olive oil

1 lemon (zested and juiced)

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

Fresh herbs (parsley or cilantro) for garnish

Preheat the oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the marinade: In a mixing bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, thyme, oregano, paprika, salt, and black pepper. Whisk together until thoroughly mixed.

      Marinate the chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken thighs, ensuring each piece is evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

        Arrange chicken in a baking dish: After marinating, place the chicken thighs skin-side up in a large baking dish or on a rimmed baking sheet lined with parchment paper. Reserve any leftover marinade for basting.

          Bake the chicken: Transfer the baking dish to the preheated oven and bake for 35-40 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (75°C). Optional: Baste the chicken with leftover marinade halfway through baking for added moisture.

            Broil for crispy skin: For extra crispy skin, turn on the broiler during the last 3-5 minutes of cooking. Keep a close eye to ensure the skin doesn’t burn.
