Ingredients

4 bone-in pork chops (about 1-inch thick)

1 cup Parmesan cheese, grated

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, thyme, basil)

1/2 teaspoon black pepper

1/2 teaspoon salt

2 large eggs

2 tablespoons Dijon mustard

1/4 cup all-purpose flour

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Breading Station: Set up three shallow dishes. In the first dish, place the flour. In the second dish, whisk together the eggs and Dijon mustard until smooth. In the third dish, combine the grated Parmesan, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.

Dredge the Pork Chops: Start by dredging each pork chop in the flour, shaking off any excess. Then dip it into the egg mixture, allowing any excess to drip off. Finally, coat the pork chop generously in the Parmesan breadcrumb mixture, pressing it gently to adhere.

Sear the Pork Chops: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear them for about 2-3 minutes on each side, until golden brown.

Bake: Transfer the skillet to the pre-heated oven and bake for 15-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C). The crust should be crispy and golden brown.

Rest and Serve: Remove the skillet from the oven and let the pork chops rest for about 5 minutes. Garnish with freshly chopped parsley before serving to add a pop of color and freshness.

Enjoy: Serve your delicious Parmesan crusted pork chops with a side of roasted vegetables or a fresh salad for a complete meal.
