Ingredients

1 package (9 oz) cheese tortellini (fresh or frozen)

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper, to taste

Oil for frying (vegetable or canola)

Fresh parsley, chopped (for garnish)

Marinara sauce (for dipping)

Instructions

Cook the Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. If using frozen tortellini, increase the cooking time as needed. Drain and set aside to cool slightly.

Prepare Breading Stations: Set up three shallow bowls. In the first bowl, add the flour seasoned with salt and pepper. In the second bowl, beat the eggs. In the third bowl, mix together the breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, and a pinch of salt and pepper.

Bread the Tortellini: Take each tortellini and first coat it in the flour, shaking off any excess. Dip it into the beaten eggs, allowing any excess to drip off, before finally dredging it in the breadcrumb mixture. Ensure each piece is well-coated and set aside on a plate.

Heat the Oil: In a deep skillet or pot, pour in enough oil to cover the tortellini pieces about halfway (about 2 inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C). To test if it's ready, drop a few breadcrumbs into the oil; they should sizzle immediately.

Fry the Tortellini: Carefully add the breaded tortellini to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes, or until golden brown and crispy. Use a slotted spoon to remove the tortellini and place them on a plate lined with paper towels to drain excess oil.

Serve: Once all the tortellini are fried, sprinkle with freshly chopped parsley for a pop of color. Serve hot with marinara sauce on the side for dipping.
