Peach and Burrata Toast

2 ripe peaches, sliced

1 ball of fresh burrata cheese

4 slices of crusty sourdough bread

2 tablespoons of extra virgin olive oil

1 tablespoon of balsamic glaze (plus extra for drizzling)

A handful of fresh basil leaves, torn

Sea salt, to taste

Freshly cracked black pepper, to taste

Optional: a sprinkle of chili flakes for a spicy kick

Toast the Bread: Preheat your oven to 400°F (200°C). Place the slices of sourdough bread on a baking sheet and brush each side with olive oil. Toast them in the oven for about 8-10 minutes or until they are golden brown and crispy. Remove and set aside.

    Prepare the Peaches: While the bread is toasting, wash and slice the peaches into thin wedges. If you prefer a sweeter flavor, you can slightly char the peach slices on a grill or in a grill pan until they have nice grill marks (about 1-2 minutes per side).

      Assemble the Toast: Once the bread is toasted, place a generous amount of burrata cheese on each slice. The cheese should be creamy, so don't be afraid to let it spill over the edges.

        Add Peaches: Arrange the peach slices beautifully on top of the burrata on each toast.
