Peach Breakfast Muffins

1 ½ cups all-purpose flour

1 cup fresh ripe peaches, diced (about 2 medium peaches)

½ cup granulated sugar

¼ cup light brown sugar, packed

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon ground cinnamon

1 large egg

½ cup plain yogurt (or buttermilk)

⅓ cup vegetable oil (or melted coconut oil)

1 teaspoon pure vanilla extract

½ cup chopped pecans or walnuts (optional)

Optional: extra peach slices for topping and a sprinkle of sugar

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Prepare the Peaches: Dice the peaches and set them aside. If you prefer, you can sprinkle them with a little bit of lemon juice to keep them fresh and vibrant.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

        Combine Wet Ingredients: In a separate bowl, whisk together the egg, yogurt (or buttermilk), vegetable oil, and vanilla extract until smooth.

          Combine Mixtures: Pour the wet ingredients into the bowl of dry ingredients. Gently fold the mixture until just combined, being careful not to overmix. It’s okay if there are still a few lumps.

            Fold in Peaches: Carefully fold in the diced peaches and chopped nuts (if using) until evenly distributed throughout the batter.

              Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ¾ full. If desired, add a slice of peach on top of each muffin and sprinkle with a little sugar for a crunchy topping.

                Bake: Place the muffin tin in the preheated oven and bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean. The tops should be lightly golden brown.

                  Cool: Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
