Ingredients

2 ripe peaches, pitted and cut into wedges

8 ounces fresh mozzarella balls (bocconcini)

1 cup fresh basil leaves

2 tablespoons balsamic glaze

1 tablespoon extra virgin olive oil

Salt and pepper, to taste

12-16 wooden or metal skewers

Instructions

Prepare the Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning during grilling (if desired). If using metal skewers, you can skip this step.

Assemble the Skewers: Start by threading a basil leaf onto the skewer, followed by a wedge of peach, and then a mozzarella ball. Repeat the sequence until the skewer is filled, leaving some space at each end for easier handling. Aim for about 3-4 pieces per skewer.

Season: Once all skewers are assembled, drizzle them lightly with extra virgin olive oil. Sprinkle with a touch of salt and pepper to enhance the flavors.

Grill (Optional): If you want a smoky flavor, preheat your grill or grill pan over medium heat. Grill the skewers for about 1-2 minutes on each side, just until the peaches have grill marks and are slightly softened. Be careful not to overcook the mozzarella.

Serve: Lay the skewers on a serving platter. Drizzle balsamic glaze over the top for added sweetness and tang. You can also sprinkle a few more fresh basil leaves for garnish.

Enjoy: Serve immediately as a refreshing appetizer or side dish at your summer gatherings!
