4 boneless, skinless chicken thighs

Salt and black pepper, to taste

2 tablespoons olive oil

2 ripe peaches, pitted and sliced

1 medium red onion, thinly sliced

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 cup chicken broth

2 tablespoons balsamic vinegar

1 tablespoon honey

1 cup fresh arugula or spinach

Crumbled feta cheese (optional, for serving)

Instructions
 

Season the Chicken: Pat the chicken thighs dry with paper towels and season both sides generously with salt and black pepper.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs and sear for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced red onion and sauté for about 3-4 minutes until softened. Add the minced garlic and fresh thyme; cook for an additional minute until fragrant.

        Add the Peaches: Stir in the sliced peaches and cook for about 2 minutes until they are slightly tender.

          Create the Sauce: Pour in the chicken broth, balsamic vinegar, and honey. Stir well, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer.

            Return the Chicken: Add the seared chicken thighs back into the skillet, nestling them into the peach mixture. Cook for an additional 4-5 minutes, allowing the flavors to meld and the chicken to reheat.

              Add Greens: Stir in the arugula or spinach just before serving, allowing it to wilt slightly in the heat of the skillet.

                Serve and Garnish: Divide the chicken and peach mixture among plates, spoon sauce over the top, and if desired, sprinkle with crumbled feta cheese for a tangy finish.
