1/4 cup brown sugar

2 cups heavy cream

1 cup whole milk

1 tablespoon cornstarch

2 tablespoons bourbon (optional)

12 large homemade or store-bought cookies (chocolate chip or sugar cookies work great)

Prepare the Peaches: In a medium bowl, combine the sliced peaches, lemon juice, and brown sugar. Toss to coat and let sit for about 15 minutes, allowing the juices to release.

    Make the Ice Cream Base: In a saucepan over medium heat, combine the heavy cream, whole milk, granulated sugar, salt, and vanilla extract. Stir until the sugar fully dissolves and the mixture is warm (do not boil).
