1 baguette, sliced into 1/2 inch pieces

1 cup fresh ricotta cheese

2 ripe peaches, peeled and diced

2 tablespoons honey

1 tablespoon balsamic glaze

1 tablespoon fresh lemon juice

1/4 cup fresh basil leaves, chopped

Pinch of salt

Olive oil, for drizzling

Black pepper, to taste

Prep the Baguette:

    Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and lightly brush both sides with olive oil. Bake for about 5-7 minutes or until they are golden and toasted. Remove from the oven and set aside.

      Prepare the Peach Mixture:

        In a mixing bowl, combine the diced peaches, honey, lemon juice, chopped basil, and a pinch of salt. Gently fold the mixture together until just combined. This allows the flavors to marry well while keeping the peaches intact.
