To start, select ripe, juicy peaches as they will provide the best flavor for your bruschetta. Begin by washing the peaches thoroughly, then slice them in half and remove the pit. For added ease, you can blanch the peaches in boiling water for about 30 seconds, which makes peeling them much simpler. Once peeled, dice the peaches into small, bite-sized pieces.

Ingredients

4 ripe peaches, pitted and sliced

1 cup fresh ricotta cheese

1 tablespoon honey

1 tablespoon lemon juice

1 teaspoon fresh thyme leaves (plus extra for garnish)

1 French baguette or artisan bread, sliced into 1-inch thick pieces

2 tablespoons olive oil

Sea salt, to taste

Freshly cracked black pepper, to taste

Balsamic glaze for drizzling (optional)

Instructions

Prepare the Peaches: In a medium bowl, combine the sliced peaches, honey, lemon juice, and thyme leaves. Toss gently to coat the peaches and set aside to marinate for about 10-15 minutes. This will enhance their sweetness and flavor.

Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the slices of baguette on a baking sheet, then brush each slice lightly with olive oil. Bake in the preheated oven for about 8-10 minutes, or until golden brown and crispy.

Mix the Ricotta: In a small bowl, season the ricotta cheese with a pinch of sea salt and freshly cracked black pepper, adjusting to taste. Mix until smooth and creamy.

Assemble the Bruschetta: Once the bread pieces are toasted, remove them from the oven. Spread a generous layer of the seasoned ricotta onto each slice of toast.

Top with Peaches: Spoon the marinated peaches over the ricotta on each slice, making sure to distribute them evenly.

Garnish and Drizzle: Finish with a sprinkle of fresh thyme leaves for garnish, and if desired, drizzle a touch of balsamic glaze over the tops for added flavor.

Serve: Arrange the bruschetta on a serving platter and enjoy as an appetizer or light snack!
