Peach & Ricotta Crostini

1 baguette, sliced into 1/2 inch pieces

2 ripe peaches, sliced

1 cup fresh ricotta cheese

2 tablespoons honey

1 tablespoon balsamic glaze

Fresh basil leaves, for garnish

Pinch of salt

1 tablespoon olive oil

Black pepper, to taste

Instructions
 

Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil and toast in the oven for about 8-10 minutes, or until golden brown and crispy.

    Prepare the Ricotta: In a mixing bowl, combine the ricotta cheese, honey, and a pinch of salt. Mix well until creamy and smooth. Adjust the sweetness by adding more honey if desired.

      Arrange the Crostini: Once the bread is toasted, remove it from the oven. Allow it to cool slightly and then spread a generous layer of the sweet ricotta mixture onto each slice.

        Add Peaches: Top each crostini with a few slices of fresh peach, draping them artfully over the ricotta.

          Drizzle: Just before serving, drizzle a small amount of balsamic glaze over each crostini for an added touch of sweetness and tang.
