Ingredients

2 ripe bananas

1 cup creamy peanut butter

1 cup rolled oats

1/4 cup honey (or maple syrup for a vegan option)

1/2 teaspoon cinnamon

A pinch of salt

1/2 cup dark chocolate chips (optional)

Chopped nuts or shredded coconut for topping (optional)

Instructions

Prepare the Bananas: Peel the bananas and slice them into 1/2 inch thick rounds. Place them on a parchment-lined baking sheet in a single layer and freeze for about 30 minutes, until firm.

Mix the Peanut Butter Base: In a mixing bowl, combine the creamy peanut butter, rolled oats, honey (or maple syrup), cinnamon, and a pinch of salt. Stir well until you have a thick and sticky mixture.

Assemble the Bites: Once the banana slices are frozen, take the baking sheet out of the freezer. Spread about 1 teaspoon of the peanut butter mixture on top of each banana slice.

Top It Off (Optional): If you're adding chocolate chips, you can place a few on top of each peanut butter banana bite. You can also sprinkle chopped nuts or shredded coconut for added texture and flavor.

Freeze Again: Place the baking sheet back in the freezer and freeze the assembled bites for another 1-2 hours, or until completely solid.

Store and Enjoy: Once frozen, transfer the bites to an airtight container or zip-lock bag, separating layers with parchment paper to prevent sticking. Store in the freezer and enjoy as a quick snack or dessert straight from the freezer!

Prep Time: 15 minutes | Total Time: 2 hours 45 minutes | Servings: Approximately 12-15 bites
