2 large ripe bananas, mashed

1 cup creamy peanut butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

1/2 cup chopped nuts (walnuts or almonds)

1/2 cup dark chocolate chips (optional)

1/2 teaspoon cinnamon

1/2 teaspoon salt

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Mix wet ingredients: In a large bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Mix well until smooth and creamy.

      Combine dry ingredients: In another bowl, mix the rolled oats, chopped nuts, cinnamon, and salt together.

        Combine wet and dry mixtures: Gradually add the dry mixture to the wet ingredients. Stir until fully combined. If using, fold in the dark chocolate chips for an extra treat.

          Spread into baking pan: Pour the oat mixture into the prepared baking pan, spreading it evenly. Press down firmly to compact the mixture.

            Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges start to turn golden brown.

              Cool and cut: Once baked, remove from the oven and let cool in the pan for about 10 minutes. Use the parchment paper overhang to lift the bars out of the pan. Allow them to cool completely on a wire rack before cutting into squares or bars.

                Serve and store: Enjoy the bars immediately or store them in an airtight container for up to a week. They also freeze well for up to 3 months!
