2 large eggs

½ cup plain Greek yogurt or sour cream

1 ½ cups peeled and finely chopped apples (about 2 medium apples, Granny Smith or Honeycrisp work well)

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon unsalted butter, melted
