Ingredients

1 pound ground turkey

1/2 cup breadcrumbs (Italian seasoned)

1/4 cup grated Parmesan cheese

1/4 cup pesto sauce (store-bought or homemade)

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1 cup cherry tomatoes, halved

1 cup baby spinach

1/4 cup additional pesto for drizzling

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Meatball Mixture: In a large bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, pesto sauce, beaten egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined—avoid over-mixing.

Form the Meatballs: Using your hands, form the turkey mixture into meatballs, about 1.5 inches in diameter. You should have approximately 16 meatballs.

Cook the Meatballs: In a large skillet, heat the olive oil over medium heat. Add the meatballs in a single layer and cook for about 8-10 minutes, turning occasionally until golden brown on all sides and cooked through (internal temperature should reach 165°F).

Add the Veggies: Once the meatballs are cooked, add the halved cherry tomatoes and baby spinach to the skillet. Stir gently to combine and cook for an additional 3-4 minutes, or until the spinach has wilted and the tomatoes have softened.

Drizzle with Pesto: Remove the skillet from heat and drizzle the additional pesto sauce over the meatballs and vegetables. Toss slightly to incorporate.

Serve: Garnish with fresh basil leaves if desired, and serve warm directly from the skillet for a cozy meal. Pair with crusty bread or a side salad for a complete dish. Enjoy!
