Pineapple Condensed Milk Cake

1 cup all-purpose flour

1 cup sweetened condensed milk

1 cup fresh pineapple, finely chopped (or canned, drained)

1/2 cup unsalted butter, softened

2 large eggs

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Optional: powdered sugar for dusting

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

    Cream the butter and sugar in a mixing bowl using an electric mixer on medium speed until the mixture is light and fluffy (about 3-5 minutes).

      Add the eggs and vanilla extract to the butter-sugar mixture, beating well after each addition to ensure everything is well combined.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients into the wet mixture, alternating with the sweetened condensed milk. Start with the dry ingredients, mix until just combined, then add in half of the condensed milk. Repeat until all ingredients are incorporated, but do not overmix.

            Fold in the chopped pineapple gently using a spatula, ensuring the pineapple is evenly distributed throughout the batter.

              Pour the batter into the prepared cake pan, smoothing the top with a spatula.

                Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

                  Allow the cake to cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.

                    Optional: Once cooled, dust the top with powdered sugar for a lovely finish. Slice and serve!
