Pineapple Glazed Tofu

1 block (14 oz) firm tofu, pressed and drained

1 cup fresh pineapple, diced

1/4 cup pineapple juice

3 tablespoons soy sauce

2 tablespoons maple syrup or honey

1 tablespoon rice vinegar

1 garlic clove, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons vegetable oil

2 green onions, chopped (for garnish)

1 sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. Pat dry with a clean towel to remove excess moisture.

    Make the Pineapple Glaze: In a medium saucepan, combine the diced pineapple, pineapple juice, soy sauce, maple syrup, rice vinegar, minced garlic, and grated ginger. Cook over medium heat, stirring occasionally, until the mixture starts to bubble—about 5 minutes.

      Thicken the Sauce: In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Gradually stir the slurry into the pineapple mixture and cook for an additional 2-3 minutes until the sauce thickens. Remove from heat and set aside.

        Cook the Tofu: In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown and crispy on all sides (about 10-12 minutes).

          Combine Tofu and Glaze: Pour the pineapple glaze over the cooked tofu in the skillet. Gently toss to coat the tofu evenly in the sauce. Cook for another 2-3 minutes to heat through.

            Serve: Plate the glazed tofu over a bed of cooked rice or quinoa. Garnish with chopped green onions and a sprinkle of sesame seeds.
