1 ripe banana, mashed

1 cup pumpkin puree (canned or freshly made)

1/3 cup coconut oil, melted

1/2 cup brown sugar or coconut sugar

1/4 cup honey or maple syrup

2 large eggs

1 cup all-purpose flour (or whole wheat flour)

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 cup chia seeds

1/2 cup chopped walnuts or pecans (optional)

1/4 cup chocolate chips or raisins (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed banana, pumpkin puree, melted coconut oil, brown sugar, honey (or maple syrup), and eggs. Mix well until all the ingredients are thoroughly combined and smooth.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt until evenly mixed.

        Combine and Add Chia Seeds: Gradually fold the dry mixture into the wet mixture using a spatula until just combined. Avoid over-mixing! Gently fold in the chia seeds and, if using, the chopped walnuts (or pecans) and chocolate chips (or raisins).

          Pour into the Pan: Transfer the batter into the prepared loaf pan, spreading it evenly.

            Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If you notice the top browning too quickly, cover it loosely with foil for the last 15 minutes of baking.

              Cool: Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
