1 ½ cups all-purpose flour

1 cup pumpkin puree (canned or fresh)

¾ cup brown sugar, packed

½ cup granulated sugar

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 tablespoon pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)

½ cup chopped walnuts or pecans (optional)

½ cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, sift together the flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside.

      Combine Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth and well blended.

        Incorporate Dry Ingredients: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          Add Mix-Ins: If desired, fold in the chopped nuts and/or dark chocolate chips to the batter for added texture.

            Scoop & Shape: Using a cookie scoop or tablespoon, drop generous spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart. Flatten the tops slightly to ensure they bake into muffin tops.

              Bake: Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean. The tops should be lightly golden.

                Cool: Allow the muffin tops to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
