Ingredients

1 ½ cups all-purpose flour

1 cup canned pumpkin puree

½ cup brown sugar, packed

½ cup granulated sugar

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt

½ cup walnuts or pecans, chopped (optional)

½ cup chocolate chips (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Mix Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract until well combined and smooth.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently with a spatula or wooden spoon until just combined. Avoid overmixing to keep your muffins light.

Optional Add-Ins: If using, fold in the chopped walnuts or pecans and chocolate chips until evenly distributed.

Fill Muffin Cups: Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.

Cool: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy the muffins warm or at room temperature, perfect for breakfast or an afternoon snack!
