Quick 30-Minute Chicken and Spinach Quesadillas

Ingredients
  

2 cups cooked chicken, shredded (rotisserie works great!)

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper, to taste

4 large flour tortillas

2 tablespoons olive oil

Optional toppings: sour cream, salsa, or guacamole

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, chopped spinach, mozzarella, cheddar, cream cheese, garlic powder, onion powder, cumin, salt, and pepper. Mix well until all ingredients are evenly distributed.

    Heat the Skillet: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble the Quesadilla: Place a tortilla in the skillet. On half of the tortilla, generously spoon the chicken and spinach filling. Fold the other half of the tortilla over to cover the filling.

        Cook the Quesadilla: Cook for about 3-4 minutes, or until the bottom is golden brown and the cheese is starting to melt. Carefully flip the quesadilla and add the remaining tablespoon of olive oil, cooking for another 3-4 minutes on the other side until golden brown and crispy.

          Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the assembly and cooking process with the remaining tortillas and filling.

            Serve: Cut each quesadilla into wedges and serve warm with your choice of sour cream, salsa, or guacamole.
