Quick Air Fryer Teriyaki Tofu Bowls

1 block (14 oz) firm tofu, drained and pressed

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 tablespoon cornstarch

1 tablespoon vegetable oil (for greasing)

2 cups cooked rice (white, brown, or cauliflower rice)

1 cup broccoli florets

1 medium carrot, julienned

½ bell pepper, sliced (any color)

2 green onions, chopped

1 tablespoon sesame seeds (for garnish)

Optional: sliced avocado, pickled ginger, and nori strips for serving

Instructions
 

Prepare the Tofu: Cut the pressed tofu into cubes (about 1-inch). In a bowl, mix soy sauce, rice vinegar, honey (or maple syrup), and sesame oil to create the marinade. Add the tofu cubes and let them marinate for about 15-20 minutes, tossing occasionally to ensure even coating.

    Coat the Tofu: After marinating, sprinkle cornstarch over the tofu and toss gently to coat all sides. This will create a crispy texture when air-fried.

      Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

        Air Fry the Tofu: Lightly grease the air fryer basket with vegetable oil. Place the marinated tofu cubes in a single layer in the basket. Air fry for 15 minutes, shaking the basket halfway through to ensure even cooking, until the tofu is golden brown and crispy.

          Cook the Vegetables: While the tofu is air frying, steam or blanch the broccoli florets and carrots until just tender (about 3-4 minutes). You can also toss them in the air fryer for the last 5 minutes of the tofu cooking time for a roasted flavor.

            Assemble the Bowls: In serving bowls, layer the cooked rice, followed by the crispy air-fried tofu, steamed broccoli, carrots, and bell pepper slices.

              Garnish: Finish each bowl with chopped green onions and a sprinkle of sesame seeds. Add optional toppings like avocado slices, pickled ginger, and nori strips for extra flavor.

                Serve and Enjoy: Drizzle additional teriyaki sauce if desired, mix gently, and serve warm!
