4 large bell peppers (any color)

1 lb ground beef or turkey

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 packet taco seasoning (about 1 oz)

1 cup salsa (mild, medium, or hot based on preference)

1 cup cooked rice (white or brown)

1 cup shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottom slightly so they stand upright.

      Cook the Meat: In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat, if necessary.

        Add Ingredients: Stir in the black beans, corn, taco seasoning, and salsa into the skillet. Allow the mixture to simmer for about 5 minutes, ensuring everything is well combined.

          Mix in Rice: Add the cooked rice to the skillet and mix well, allowing it to heat for another 2-3 minutes.

            Stuff the Peppers: Spoon the taco mixture generously into each prepared bell pepper, pressing down lightly to ensure they're well packed.

              Add Cheese: Place the stuffed peppers in a baking dish. Top each pepper with shredded cheese.

                Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the peppers are tender.

                  Serve: Remove the peppers from the oven and let them cool for a few minutes. Garnish with freshly chopped cilantro. Serve with sour cream and lime wedges on the side.
