200g pasta (spaghetti or fettuccine)

150g bacon, diced

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon black pepper

1 teaspoon salt (to taste)

Fresh parsley, chopped (for garnish)

Optional: 1/4 teaspoon red pepper flakes (for heat)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prep the Bacon: In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes. Remove the bacon and drain on paper towels, but leave about 1 tablespoon of bacon fat in the skillet.

      Sauté Garlic: In the same skillet with the bacon fat, add the minced garlic and sauté for about 1 minute until fragrant, but not browned.

        Make the Cream Sauce: Lower the heat and pour in the heavy cream. Stir continuously and let it simmer for 2-3 minutes to thicken slightly.

          Add Cheese: Gradually add the grated Parmesan cheese, stirring until completely melted and smooth. If the sauce is too thick, add some reserved pasta water a little at a time until desired consistency is reached.
