Quick BBQ Chicken and Corn Quesadillas

2 cups cooked chicken, shredded

1 cup BBQ sauce (your choice of sweetness and smokiness)

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped (optional for garnish)

8 medium flour tortillas

2 tablespoons olive oil

Salt and pepper to taste

Sour cream and salsa (for serving)

Instructions
 

Mix the Chicken: In a bowl, combine the shredded chicken with the BBQ sauce. Mix thoroughly until the chicken is evenly coated. Add salt and pepper to taste.

    Prepare the Quesadilla Filling: In a separate bowl, combine the BBQ chicken mixture, corn kernels, chopped red onion, and half of the cheddar cheese. Mix well and set aside.

      Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

        Assemble the Quesadilla: Place one tortilla in the skillet. On one half of the tortilla, spread a generous scoop of the BBQ chicken and corn mixture. Sprinkle some of the remaining cheddar cheese on top. Fold the tortilla in half.

          Cook the Quesadilla: Cook for about 2-3 minutes on the first side until golden brown. Carefully flip and cook the other side for an additional 2-3 minutes until the cheese is melted and the tortilla is crispy. Remove from skillet and repeat with the remaining ingredients, adding olive oil as needed.

            Serve and Enjoy: Once all quesadillas are cooked, cut them into wedges and serve warm, garnished with fresh cilantro if desired. Offer sour cream and salsa on the side for dipping.
