1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

8 corn tortillas

2 cups shredded cheddar cheese (or a Mexican cheese blend)

1 1/2 cups enchilada sauce (store-bought or homemade)

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Use a wooden spoon to break it up. Cook until browned, about 5-7 minutes.

      Add Aromatics: Drain excess grease if necessary. Add the diced onion and minced garlic to the beef, cooking until the onion is translucent, about 3-4 minutes. Stir in chili powder, cumin, smoked paprika, salt, and pepper, cooking for an additional minute to bloom the spices.

        Prepare Tortillas: Warm the corn tortillas in a skillet or microwave until pliable (about 30 seconds in the microwave covered with a damp paper towel).

          Assemble the Enchiladas: Take a tortilla and place a couple of tablespoons of the beef mixture in the center. Sprinkle with a tablespoon of cheese, then roll it up tightly. Repeat this process with the remaining tortillas and filling.

            Layer in Baking Dish: Spread about 1/2 cup of enchilada sauce evenly in the bottom of a 9x13 inch baking dish. Arrange the rolled enchiladas seam-side down in the dish. Pour the remaining enchilada sauce over the top, ensuring they are well-coated. Sprinkle with the remaining cheese.
