Ingredients

For the Beef Filling:

1 lb ground beef (80/20 for optimal flavor)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup beef broth or water

For the Avocado Lime Sauce:

1 ripe avocado

½ cup plain Greek yogurt or sour cream

Juice of 1 lime

1 clove garlic, minced

Salt and pepper to taste

Fresh cilantro, chopped (optional, for garnish)

For Assembling:

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or a Mexican blend)

Sliced jalapeños (optional)

Instructions

Cook the Beef:

    - In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.

      - Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        Season the Beef:

          - Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Mix well and pour in the beef broth. Let it simmer for 5 minutes until the flavors meld and the liquid slightly reduces.

            Prepare the Avocado Lime Sauce:

              - While the beef is cooking, in a blender or food processor, combine the avocado, Greek yogurt (or sour cream), lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to your taste.

                Warm the Tortillas:

                  - In a separate dry skillet or on a grill, warm the tortillas over medium heat for about 30 seconds on each side, or until pliable and slightly charred.

                    Assemble the Tacos:

                      - To each warm tortilla, add a generous spoonful of the beef mixture. Top with shredded lettuce, diced tomatoes, shredded cheese, and sliced jalapeños if desired.

                        Drizzle with Avocado Lime Sauce:

                          - Finish off with a drizzle of the avocado lime sauce, and garnish with fresh chopped cilantro if using.

                            Serve Immediately:

                              - Serve the tacos with lime wedges on the side for an added zest.
