Instructions

Cook the Beef:

    - In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.

      - Add the minced garlic and cook for an additional 30 seconds, until fragrant.

        - Increase the heat to medium-high and add the ground beef. Break it up with a spatula and cook until browned (about 5-7 minutes).

          - Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for another 2-3 minutes to allow the spices to blend with the beef. Remove from heat.

            Make the Fresh Salsa:

              - In a bowl, combine the diced tomatoes, red onion, jalapeño pepper, and cilantro. Pour in the lime juice and add salt to taste. Mix well and set aside to let the flavors meld.

                Warm the Tortillas:

                  - In a dry skillet over medium heat, warm each tortilla for about 30 seconds on each side until soft and pliable. Alternatively, you can wrap them in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes.

                    Assemble the Tacos:

                      - Take a warmed tortilla and layer a portion of the beef filling down the center. Top with shredded lettuce, a sprinkle of cheddar cheese, and generous spoonfuls of fresh salsa. If desired, add a dollop of sour cream and a few slices of avocado.

                        Serve:

                          - Serve immediately while warm, and enjoy your delicious and quick beef tacos with fresh salsa!
