Quick Beef Tacos with Fresh Salsa and Avocado

For the Beef:

1 lb (450g) ground beef

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

8 small corn or flour tortillas

For the Fresh Salsa:

2 ripe tomatoes, diced

1/2 red onion, finely chopped

1 jalapeño, minced (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Avocado:

1 ripe avocado, halved and pitted

Juice of 1/2 lime

Salt and pepper to taste

Cook the Beef:

    In a large skillet over medium heat, add olive oil. Once heated, add the chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and sauté for another 30 seconds until fragrant.

      Add Seasonings and Beef:

        Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Increase the heat to medium-high and add ground beef to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes. Drain excess fat if needed.

          Warm the Tortillas:

            While the beef is cooking, warm the tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in aluminum foil and placing them in a preheated oven at 350°F (175°C) for 10 minutes.

              Make the Fresh Salsa:

                In a mixing bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Toss until well combined and set aside to let the flavors meld.

                  Prepare the Avocado:

                    In a small bowl, scoop out the avocado flesh and mash it lightly with a fork. Add lime juice, salt, and pepper to taste for added flavor.

                      Assemble the Tacos:

                        Fill each tortilla with a generous scoop of the seasoned beef. Top with fresh salsa and a dollop of the mashed avocado.

                          Serve:

                            Enjoy your tacos immediately while they're warm, garnished with extra cilantro if desired!
