2 cups cooked shredded chicken

1/2 cup Buffalo sauce (adjust to taste)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1/4 cup diced green onions (optional, for garnish)

1/4 cup ranch or blue cheese dressing (for dipping)

Instructions
 

Preheat the skillet: Heat a large non-stick skillet over medium heat. Add the olive oil and let it warm up.

    Mix the chicken and sauce: In a mixing bowl, combine the cooked shredded chicken and Buffalo sauce. Stir until the chicken is well-coated.

      Assemble the quesadillas: Lay a flour tortilla on a clean surface. On one half of the tortilla, sprinkle a mix of cheddar and mozzarella cheese. Add a generous portion of the Buffalo chicken mixture on top of the cheese. Sprinkle a bit more cheese over the chicken, then fold the tortilla in half.

        Cook the quesadillas: Once the skillet is hot, carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese has melted. Repeat with the remaining tortillas.
