1 cup uncooked brown rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup diced bell peppers (any color)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded cheese (cheddar or a blend)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sour cream or Greek yogurt (optional, for serving)

Instructions
 

Cook the Rice: In a medium saucepan, combine the brown rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes, or until rice is tender and water is absorbed. Fluff with a fork and set aside.

    Sauté the Veggies: While the rice cooks, heat the olive oil in a large skillet over medium heat. Add the diced bell peppers and sauté for about 5 minutes, until they start to soften.

      Combine Ingredients: To the skillet, add the rinsed black beans, corn, garlic powder, cumin, and chili powder. Stir everything together and let it cook for another 5-7 minutes until heated through. Season with salt and pepper to taste.

        Mix in Rice: Once the rice is done, add it to the skillet with the bean and veggie mixture. Stir well to combine, allowing the flavors to meld for a couple of minutes.

          Cheesy Goodness: Remove the skillet from heat and sprinkle the shredded cheese on top of the rice and bean mixture. Cover the skillet for a few minutes to let the cheese melt.

            Assemble the Bowls: In individual serving bowls, layer the cheesy rice and bean mixture, then top with diced avocado, halved cherry tomatoes, and fresh cilantro. Squeeze lime juice over the top to brighten the flavors.
