Ingredients

1 pound ground beef (or turkey)

1/2 cup breadcrumbs (Italian seasoned preferred)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

4 sub rolls

1 cup shredded mozzarella cheese

Fresh basil for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Make the Meatballs: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, parsley, onion powder, Italian seasoning, salt, and pepper. Mix until well combined, but avoid overmixing to keep the meatballs tender.

Form Meatballs: Using your hands, form the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.

Bake the Meatballs: Bake the meatballs in the preheated oven for about 20 minutes or until they are cooked through and have a nice golden color.

Warm the Marinara: While the meatballs are cooking, heat the marinara sauce in a medium saucepan over low heat.

Assemble the Subs: Once the meatballs are done, remove them from the oven. Place about 3-4 meatballs in each sub roll and spoon marinara sauce over the top. Then, sprinkle a generous amount of shredded mozzarella cheese over the meatballs.

Melt the Cheese: Place the assembled subs back on the baking sheet and return them to the oven. Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve: Remove from the oven, and let cool for a minute. Garnish with fresh basil if desired before serving. Enjoy your delicious meatball subs!
