Ingredients

1 pound large shrimp, peeled and deveined

1 bunch asparagus, woody ends trimmed and cut into 2-inch pieces

4 cloves garlic, minced

2 tablespoons olive oil

Zest and juice of 1 medium lemon

1 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Instructions

Prepare the Ingredients: Start by rinsing the shrimp under cold water and patting them dry with paper towels. Trim the asparagus and cut them into manageable pieces. Mince the garlic and zest the lemon. Set everything aside.

Sauté the Asparagus: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus pieces and season with salt and pepper. Sauté for around 3-4 minutes, or until bright green and tender-crisp. Remove the asparagus from the skillet and set aside.

Cook the Shrimp: In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Be careful not to let the garlic burn.

Add the Shrimp: Quickly add the shrimp to the skillet and season with salt and black pepper. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 1-2 minutes on the other side.

Combine & Flavor: Return the sautéed asparagus to the skillet with the shrimp. Pour in the lemon juice and sprinkle the lemon zest over the mixture. Toss everything together to combine and heat through, cooking for an additional minute.

Serve: Remove from heat and garnish with fresh parsley. Serve immediately with lemon wedges on the side for an extra zing.
