Ingredients

4 salmon fillets (approx. 6 oz each)

1 pound fresh asparagus, trimmed

3 tablespoons olive oil

2 tablespoons fresh lemon juice (about 1 medium lemon)

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper to taste

Lemon wedges for serving

Fresh parsley, chopped for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper.

Marinate Salmon: Place the salmon fillets in a shallow dish or a zip-top bag. Pour half of the marinade over the salmon, coating each fillet well. Let it marinate for about 15 to 20 minutes while preparing the asparagus.

Prepare Asparagus: On the same baking sheet, arrange the trimmed asparagus in a single layer. Drizzle the remaining marinade over the asparagus and toss to coat evenly.

Bake: Place the marinated salmon fillets on the baking sheet, skin-side down, alongside the asparagus. Bake in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork and the asparagus is tender but still crisp.

Serve: Remove from the oven and let it rest for 2 minutes. Serve the salmon and asparagus on plates and garnish with fresh parsley and lemon wedges.
