1 pound spicy Italian sausage, casings removed

1 medium onion, diced

3 cloves garlic, minced

3 large carrots, sliced

2 medium potatoes, diced

6 cups chicken broth

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon smoked paprika

1 bunch kale, stems removed and leaves chopped

1 can (14.5 oz) diced tomatoes (with juices)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the spicy Italian sausage and break it apart with a spoon. Cook until browned, about 5-7 minutes.

    Add Aromatics: Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

      Incorporate Vegetables: Stir in the sliced carrots and diced potatoes, cooking for another 3-5 minutes until they begin to soften.

        Add Broth and Seasoning: Pour in the chicken broth, followed by the diced tomatoes, red pepper flakes, and smoked paprika. Bring the mixture to a boil, then reduce the heat to a simmer.

          Combine with Kale: Once simmering, add the chopped kale to the pot. Stir well and let the soup simmer for an additional 10-15 minutes, or until the potatoes are tender.
