Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets

1 cup cooked rice (white, brown, or cauliflower rice)

1/4 cup teriyaki sauce (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced (or 1/2 teaspoon ground ginger)

1 tablespoon vegetable oil

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions

Prepare the Chicken: In a medium bowl, toss the chicken pieces with salt, pepper, and half of the teriyaki sauce. Allow it to marinate for about 10 minutes while you prepare the other ingredients.

Cook the Broccoli: In a large pan or skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the broccoli florets and sauté for about 3-4 minutes until they are vibrant green and slightly tender. Remove from the pan and set aside.

Cook the Chicken: In the same pan, add another tablespoon of vegetable oil if needed. Add the minced garlic and ginger, cooking for about 30 seconds until fragrant. Then, add the marinated chicken. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly caramelized.

Combine Ingredients: Once the chicken is cooked, return the broccoli to the skillet. Pour in the remaining teriyaki sauce and soy sauce. Stir well to combine all the ingredients and heat through for another 1-2 minutes.

Serve the Bowls: In a serving bowl, add a scoop of cooked rice at the bottom. Top with the chicken and broccoli mixture. Drizzle with sesame oil, and garnish with sesame seeds and sliced green onions.

Enjoy: Serve immediately and enjoy this flavorful and quick meal!
