1 lb boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces

2 cups cooked white or brown rice

1/4 cup teriyaki sauce (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch ginger, grated

1 cup broccoli florets

1 cup bell peppers, sliced (any color)

1/2 cup carrots, julienned

2 green onions, sliced (for garnish)

Toasted sesame seeds (for garnish)

Marinate the Chicken: In a bowl, combine chicken pieces with teriyaki sauce, soy sauce, minced garlic, and grated ginger. Let it marinate while you prep the vegetables, ideally for 10-15 minutes.
