1 lb (450g) boneless, skinless chicken thighs, sliced into thin strips

2 tablespoons vegetable oil

1 cup bell peppers (mixed colors), sliced

1 cup broccoli florets

1 cup snap peas

3 green onions, chopped (white and green parts separated)

2 cloves garlic, minced

1 teaspoon ginger, grated

1/4 cup teriyaki sauce (store-bought or homemade)

2 cups cooked jasmine rice

1 tablespoon sesame seeds (for garnish)

Salt and pepper, to taste

Instructions
 

Prepare the Rice: If you haven't already, cook the jasmine rice according to package instructions. Once cooked, set aside and keep warm.

    Sauté Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken thighs, seasoning with a pinch of salt and pepper. Stir-fry for about 5-7 minutes, until the chicken is cooked through and slightly browned.

      Add Vegetables: Add the sliced bell peppers, broccoli florets, snap peas, and the white parts of the chopped green onions to the skillet. Stir-fry for an additional 3-4 minutes, or until the vegetables are tender-crisp.

        Flavor it Up: Add the minced garlic and grated ginger to the skillet, stirring constantly for about 30 seconds until fragrant. Then pour in the teriyaki sauce and stir everything to coat evenly.
