Ingredients

2 salmon fillets (approximately 6 oz each)

1/4 cup teriyaki sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon fresh ginger, minced

1 garlic clove, minced

1 cup broccoli florets

1 cup snap peas

1 cup baby carrots, sliced

1 tablespoon sesame seeds (for garnish)

2 green onions, finely chopped (for garnish)

Salt and pepper to taste

Instructions

Marinate the Salmon: In a small bowl, mix together the teriyaki sauce, minced ginger, and minced garlic. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated. Let them marinate for at least 15 minutes.

Prepare the Veggies: While the salmon is marinating, rinse the broccoli, snap peas, and baby carrots. Set up a steamer basket over a pot of boiling water. Add the vegetables to the steamer basket, sprinkle with a pinch of salt, and cover. Steam for about 5-7 minutes, or until they are vibrant and tender-crisp.

Cook the Salmon: In a large non-stick skillet, heat the olive oil over medium-high heat. Remove the salmon from the marinade, letting excess marinade drip off (reserve the remaining marinade). Once the oil is hot, add the salmon fillets, skin-side down. Cook for about 4-5 minutes, then flip and pour the reserved marinade over the top. Cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork.

Plate the Dish: On a serving platter, arrange the steamed vegetables. Lay the teriyaki salmon fillets on top and drizzle any remaining sauce from the skillet over the fish.

Garnish and Serve: Sprinkle sesame seeds and chopped green onions over the salmon and vegetables for added flavor and visual appeal. Serve immediately and enjoy your Quick Teriyaki Salmon with Steamed Veggies!
