Ingredients

8 oz. spaghetti or pasta of choice

1 pint cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup fresh basil, chopped

1/4 cup balsamic vinegar

1/4 cup extra virgin olive oil

Salt and black pepper, to taste

1/2 cup grated Parmesan cheese (optional)

1/4 tsp red pepper flakes (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Prepare the Tomato Mixture: While the pasta is cooking, heat a large skillet over medium heat. Add the olive oil and minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Add the Tomatoes: Incorporate the halved cherry tomatoes into the skillet. Stir in the balsamic vinegar, and season with salt, black pepper, and red pepper flakes. Cook for about 3-4 minutes, until the tomatoes soften and release their juices.

Combine Pasta and Mixture: Add the drained pasta to the skillet with the tomato mixture. Toss gently to combine, adding reserved pasta water as needed to reach the desired sauce consistency.

Final Touch: Stir in the chopped basil and toss again. If desired, sprinkle grated Parmesan cheese over the top before serving.

Serve: Plate the pasta and garnish with additional basil and Parmesan if you like. Enjoy this fresh and vibrant dish while warm!
