1 lb ground turkey

1 tablespoon olive oil

1 cup diced bell peppers (any color)

1 cup shredded carrots

1 cup diced cucumbers

3 green onions, finely chopped

2 cloves garlic, minced

2 tablespoons fresh ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

1 head of butter or iceberg lettuce (for wrapping)

Sesame seeds and chopped cilantro (for garnish)

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if needed.

    Add Aromatics: Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

      Incorporate Veggies: Add the diced bell peppers and shredded carrots to the skillet. Cook for an additional 3-5 minutes, stirring occasionally until the vegetables are slightly softened.

        Flavor it Up: Pour in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Mix well to combine all ingredients. Season with salt and pepper to taste. Allow the mixture to cook for another minute to let the flavors meld.

          Prepare Lettuce Wraps: While the turkey mixture finishes cooking, carefully separate the leaves from the head of lettuce. Rinse and pat them dry with a kitchen towel.
